The difference between undenatured and denatured protein has to do with the processing of the whey protein. Undenatured whey protein is not heat processed like denatured protein and as a result the amino-acid chemical mix and is of a much higher quality.
In summary, whey protein is obtained through the cheese making process, wherein it is heated to 70°C or 158°F before any filtering process even begins. To get undenatured you must find one that does not come from cheese production. The products I use come from grass feed New Zealand cows and is totally whole, natural and undenatured whey protein. It is more expensive, but definitely worth the investment.
